About 2km east of the bustling Machida Station, the area around Naruse Station is a stark contrast, with a quiet residential neighborhood. In one corner of this neighborhood, a bright red awning stands out, marking the location of "Home Delica TAICHI." Inside, the display cases are filled with a wide variety of homemade hams and sausages, all crafted with care by skilled artisans.

The shop is run by the owner, Taichi Sasaki. Seeing him and his parents, who are always smiling, serving customers together, you can feel the warmth of old times and the strong bonds of family.

From this cozy and unpretentious space, a beloved signature item was born, enjoyed by many fans.

The Sasaki family, who originally ran a butcher shop in Setagaya Ward, moved to Naruse in 1994 (Heisei 6), where a relative owned the property. Initially, they continued to mainly sell fresh meat, but in response to the opening of a large supermarket nearby, they shifted their focus to selling processed meats such as homemade ham and sausages.

It was in this context that "Naruse Gyoza," now the shop's signature dish, was born. It's a unique item: a dumpling that looks like a sausage.

The inspiration came from the homemade dumplings I made back when I lived in Setagaya. "It's difficult to cook dumplings well. So, what if I stuffed them into casings like sausages?" That was the starting point of the idea. I thought that if they could be cooked simply by rolling them around in a frying pan, people could easily enjoy dumplings at home—and that's how the development started.

Three years of trial and error. The pursuit of the ideal led to a combination of "domestically produced" and "handcrafted" products.

It took about three years of trial and error to arrive at the current flavor. Initially, when they simply stuffed the gyoza filling into sausages, the moisture was lost during the cooking process, resulting in a dry texture. Sasaki and his team repeatedly made prototypes, checking the texture and juiciness each time in pursuit of their ideal quality.

The result was to source all ingredients domestically and knead the dough by hand. The amount of water is finely adjusted by feel to match the moisture content of the vegetables, which varies depending on the season. By sticking to this commitment to handcrafted work, they finally created "Naruse Gyoza," which has the unique charm of "looking like a sausage but tasting like a dumpling."

The starting point for the ideas is the owner's honest feeling of "what he likes to eat." "I like alcohol, so I thought that a sausage with sansho pepper would make a good snack. Or, I thought it would be nice to have a sausage with edamame for kids. Development starts from thoughts like that," says Sasaki. Apparently, sausages with pickled plum and shiso are also a popular item.

The manufacturing process is also unique, employing a "non-smoked" method that deliberately avoids smoking. The soft and juicy texture, achieved precisely because it's not smoked, is another appealing feature.
