A five minute walk from HOTEL RESOL TRINITY KANAZAWA, at Musashi-ga-tsuji intersection, is a building that stands out with its appearance resembling stacked gift boxes - that is Kanazawa Hakomachi.

The concept of this place is to offer visitors a "new style of hospitality" and to gift them special time and space in which to discover a "new you."

"OHAKO", located on the first floor of "Kanazawa Hakomachi", sells moist and chewy Baumkuchen made with Ishikawa Prefecture Koshihikari rice flour. It is a popular souvenir and gift item among locals.

We spoke to sales staff member Yamamoto about the appeal of "OHAKO."

As Yamamoto says, Baumkuchen is a sweet that is enjoyed by people of all ages and generations.

The many layered dough symbolizes the accumulation of years and happiness, and is chosen as a sweet that connects connections in a variety of occasions, such as wedding and birth celebrations, seasonal gifts, and small souvenirs.

This Baumkuchen is made with the hope that it will be a sweet that can connect people in a variety of situations.

Commitment to Ishikawa Prefecture Koshihikari

The defining feature of OHAKO's Baumkuchen is, without a doubt, its ingredients. OHAKO was founded with the desire to promote local ingredients, and instead of the usual wheat flour baumkuchen, they use Ishikawa Prefecture's Koshihikari rice flour instead.

Baumkuchen is popular with people of all ages and genders, but the baumkuchen at "OHAKO" is so sweet that you can eat the whole cake in one sitting. Rather than getting tired of eating it halfway through, many customers come back to buy more because they "didn't get enough."

The reason for this is the rice flour produced in Ishikawa Prefecture, and they are particular about using Koshihikari rice produced in Ishikawa Prefecture. "It has a high stickiness and moisture content, so it is more suitable for Baumkuchen than rice from other regions," Yamamoto-san explained, explaining his commitment to selecting ingredients.

It can also be eaten gluten-free, making it popular with people with wheat allergies and health-conscious people.

"OHAKO" also offers a product that combines baumkuchen with yokan.

"It might be interesting to add a Japanese touch that is typical of Kanazawa to Western sweets."
