Omicho Market has been supporting the city's kitchens for 300 years and is the center of Kanazawa's food scene. In Omicho, which is loved by both locals and tourists, you will find Japan's first microgreen specialty restaurant, "OTM Restaurant."
"OTM Restaurant" creates new value in delicious food and offers a dining experience never before seen.
We spoke to Yuka Miyamoto, PR/Marketing manager, about OTM and the appeal of microgreens.
Microgreens are young vegetables that have been sprouting for about 1 to 3 weeks. They are small vegetables less than 5 cm in size, but they are said to contain five times the nutrients of mature vegetables, such as vitamin C, vitamin K, vitamin E, lutein, and carotenoids.
Compared to mature vegetables, the taste is less bitter and harsh, and the aroma and flavor are delicate and rich.
Miyamoto-san told us, "At OTM, we use 20 different types of microgreens. Each type has its own unique flavor."
To make the most of the appeal of these microgreens, they researched how to combine them with various ingredients. As a result of their careful study, they have created a variety of dishes that can only be enjoyed here at "OTM Restaurant."
There are many different ways to enjoy microgreens on your menu.
Light meals such as pasta sets and sandwiches. Special Basque cheesecake. Menu items made with microgreens create a vibrant green color that stimulates both the eyes and the taste buds.
Among the many tempting menu items, the signature course menu "PREFIX OTM PLATE" is particularly eye-catching.
The highlight of the course is the impressive "OTM TRAY." It is covered with four types of microgreens, on which three seasonal appetizers, a choice of main dish, and pasta are served right in front of you.
In addition to the "OTM TRAY", the course includes soup of the day, an aperitif (alcoholic or non-alcoholic), handmade three-color bread, and a set drink. It is a very satisfying course packed with attention to detail.
The visual aspect of the menu is characterized by its rich color, using not only the vibrant green of microgreens, but also the natural colors of tomatoes, peppers, and other ingredients to create a colorful finish.
And in order to make the colors stand out even more, the restaurant space itself has been deliberately designed to be inorganic.
The exposed concrete walls and exposed ceiling that doesn't hide the pipes are unified in a cold, linear design that somehow evokes the near future.
The seating is limited to a straight counter, which also conveys an impersonal feel, and one of OTM's charms is being able to enjoy the quality of the design.
OTM's menu is not limited to meals, they also have a wide selection of desserts. The most recommended item is "OTM ICECREAM".
This is an experiential menu where you choose your favorite type, base, and microgreen flavor and mix them into ice cream on the spot. The concept is to transform ice cream from an immoral confection to a moral delight.
This ice cream is packed with nutrition from microgreens, and is flavorful and guilt-free, so you can enjoy it as a takeaway.
