Morihachi is the oldest and most established Japanese confectionery store in Ishikawa Prefecture. Founded in 1625 as the official confectioner for the Kaga domain, it boasts a history of 400 years.

This leading Japanese confectionery store in Kanazawa has recently opened a new chocolate specialty store, "UNFINI." The store's appeal is in its new, never-before-seen sweets, which combine chocolate, a representative Western confectionery, with Japanese elements such as homemade bean paste.

We asked Director and Office Manager Shinya Morioka about the appeal of "UNFINI."

The appeal of the fusion of Japanese culture and chocolate

Chocolate alone can tend to taste too strong or monotonous.

Therefore, by incorporating Japanese elements, the flavor becomes delicate and the heavy aftertaste that is typical of chocolate is reduced.

Not only that, but by combining it with Japanese elements, you can reduce the fat content that is often a concern when eating sweets.
However, by not emphasizing the Japanese elements too much, we have a range of products that can be enjoyed even by people who have never been interested in Japanese sweets before.

"They appreciate the appeal of fresh products, which can only be bought on that day and eaten in that place," Morioka told us.

In today's world, people are giving gifts less and less. We want people to enjoy products that can only be purchased at this store, not just as gifts, but as a reward for themselves. That is the concept of "UNFINI".

UNFINI: A store that doesn't talk

Until now, the creators of Morihachi's products as a Japanese confectionery shop have always been Japanese confectioners.
However, many of the "UNFINI" products are manufactured locally by Morihachi's sales staff, which is apparently a first for Morihachi.

By manufacturing close to our customers, we are able to offer the appeal and security of freshly made products.

In addition, "UNFINI" has booths at various events. Even at the event, you cannot see the faces of the craftsmen.
With the aim of being a chocolate brand that can be appreciated even without seeing the face of the artisan, they also set up booths at events such as Valentine's Day specials where sales rankings are revealed.

They continue to launch new ventures that overturn the conventional image of a traditional Japanese confectionery shop.

We will introduce four of UNFINI's attractive products.

"Terrine En Chocolat" allows you to enjoy the changing flavors of the two layers.
Chocolate terrine has a rich image, but the use of bean paste gives it a gentle and refreshing taste.

"Nama Chocolate" flavored with ingredients from Ishikawa Prefecture

"Nama Chocolate" flavored with ingredients from Ishikawa Prefecture

"Raw Chocolate" flavored with ingredients from Ishikawa Prefecture, including Noto bean paste.
The greatest appeal of this product is the excellent combination of raw chocolate and bean paste.

Morioka told us, "I chose raw chocolate because freshness is important so you can enjoy the original flavor of the chocolate rather than hard chocolate."
The refined flavor of the bean paste enhances the natural taste of the chocolate.

"Wasanbon Chocolate Pudding" is not sold at the event venue.

It's so soft that it can't withstand shipping. It's a special pudding that can only be purchased at the main store.

The last thing I'd like to introduce is the "soft serve ice cream" that you'll never find anywhere else.

Typical chocolate-flavored soft serve ice cream is made using undiluted chocolate flavoring.
However, UNFINI produces its own concentrate. As a chocolate brand from a Japanese confectionery shop, they use monaka (a type of wafer) with bamboo charcoal instead of cones.

In addition, there is red bean paste near the handle, so you can enjoy it until the last bite.
