Omicho Market is the food center of Kanazawa with a history of 300 years. This market, popular with locals and tourists, is home to a restaurant called "Omicho Seafood Market Cuisine Ichinokura" where you can enjoy crab dishes all year round.
This seasonal menu allows you to enjoy a whole serving of Ishikawa Prefecture's famous brand crab, "Kano Crab." You can choose fresh crab from the tank inside the restaurant and have it cooked the way you like - "sashimi," "charcoal grilled," or "steamed," which is a surefire attraction for tourists.
We spoke with Natsumi Kumamoto, head of the sales planning department, about the appeal of Ichi no Kura and the ingredients that Ishikawa Prefecture is proud of.
"Ishikawa Prefecture is blessed with a lot of rainfall and is close to the mountains and the sea. This environment nurtures winter delicacies such as Ishikawa's brand crabs, "Kanon crab" and "Kobako crab," as well as fresh seafood known nationwide, such as sweet shrimp, known as the "jewel of the sea."
Kumamoto adds, "Kaga vegetables, which have grown in Kanazawa's unique climate and environment, are also indispensable. Kanazawa's nationally renowned brand vegetables, such as Kaga lotus root and golden radish, are not only popular in restaurants, but are also popular on the dining tables of locals."
Omicho Market is filled with such charming local ingredients, or jiwamon (local produce).
There are very few places in Kanazawa where you can enjoy crab dishes outside of crab season.
"We want tourists to be able to enjoy crab whenever they come to Kanazawa, so at Ichinokura we serve crab dishes all year round," he said, explaining his motivation for offering crab dishes all year round.
Of all the crab dishes that can be enjoyed all year round, Kumamoto especially recommends "Kurayaki" (grilled crab in the shell).
This dish is made by stuffing crab meat and crab miso into a charcoal-grilled shell, allowing you to enjoy a rich and unique flavor. In addition, the raw egg is mixed in to reduce the fishy smell and give it a mellow texture.
The "Kurayaki" at "Ichinokura" is a dish that can only be eaten here and can be enjoyed with all five senses, as it is particularly beautiful to look at.
You can enjoy crab at Ichi no Kura all year round, but according to Kumamoto, winter is the best time to visit Kanazawa.
The reason Kumamoto says this is because Ishikawa Prefecture has a particularly rich winter menu, with a wide variety of fresh seafood that can only be found in winter, including snow crab, fatty winter yellowtail, and blackthroat seaperch.
Also, don't miss the winter vegetables such as Kaga lotus root and green onions. Another attraction of winter is being able to enjoy freshly squeezed sake.
Ichinokura offers the highly popular "Taste of Ishikawa Course," which allows you to fully enjoy the flavors of winter. You can enjoy local ingredients such as snow crab, winter yellowtail, and seared rosy seabass sashimi to the fullest. Highly recommended for gourmets.
