As you walk to Okachimachi Station, you'll come across a place with many traditional shops, where there's a line of people waiting even before it opens. Beyond the shop's doors lies a stylish space that also exudes a sense of nostalgia and warmth.

When we spoke to a store staff member, he told us, "egg baby café was opened in December 2018 as part of the urban development initiative to develop the area under the elevated railway lines that runs from Akihabara Station to Okachimachi Station. We hoped that with the Olympics scheduled to be held in 2020, we would see an increase in customers from overseas."

Since the store opened during the COVID-19 pandemic, initially most customers were locals. Now, five years later, thanks to TV and social media, it seems to be bustling with people in their 20s and 30s, as well as customers from overseas.

Between Akihabara Station and Okachimachi Station, there are many stores that give off a good old Japanese vibe, but this shop chooses to stick to the American style.

"Aside from egg baby café, the stores we operate are mostly American-style. I think that if there was a store with a different atmosphere in a typically Japanese streetscape, people would stop and look. The coolness of the concrete under the elevated railway line is very similar to Brooklyn. We designed the store to harmonize with the atmosphere of this location."

A specialty store using eggs, beloved around the world

"Egg Baby Café" is a shop that specializes in egg dishes. Its sandwiches, toast, and puddings have been especially popular since it first opened.

"Eggs are a food that is loved all over the world, except for some religious reasons. That's why I think egg dishes can be a way to connect us with people around the world."

For this reason, he runs a restaurant specializing in egg dishes.

Furthermore, when asked about the commitment to handmade cooking, he replied, "We are particular about making everything by hand from raw eggs in our kitchen. Our standard menu item, the "Egg Baby Sandwich," uses four eggs, but because we are a restaurant specializing in egg dishes, we use several hundred eggs a day."

He continued, "Purchasing pre-made boiled eggs and tartar sauce allows us to serve meals to customers quickly, but if we value flavor and freshness, we can't save time."

I think being surrounded by antique furniture naturally creates a sense of calm and warmth."
