HARENO GARDEN EAST & WEST opened in the Nishinakasu area of Tenjin Central Park in 2019 as an urban oasis. Among the many restaurants and cafes lined up in this popular spot for a break, one particularly popular shop is the bakery cafe "stock."
The owner, Mr. Hirayama, has had a strong passion for the business since it was founded.

"Stock" is a shop opened in collaboration between "pain stock", a hugely popular bakery in Fukuoka with its main store in Hakozaki, and "COFFEE COUNTY", which deals in carefully selected coffee beans shipped directly from the source.

Since its founding, "pain stock" has been offering bread that is "delicious even when stored" by using a long-term aging and high-hydration method. Not only can it be kept in the refrigerator for a long time, but many of the breads also become more delicious the longer they are stored, so it's no wonder they have such a loyal fan base.
In fact, the owner, Mr. Hirayama, used to work in the construction industry. He wanted to try a different job that involved physical activity, and when he got the opportunity, he started baking bread, which is how Pan Stock was born. Mr. Hirayama has a strong sense of curiosity and has been looking at various types of bread and trying to make them himself. The more he did it, the more he got into it, and before he knew it, he had a bakery.
When he first started learning about bread, he often traveled to Tokyo and France to eat bread. After training in bread making at a bakery in Tokyo for about four years, he returned to Hakozaki, Fukuoka, and opened his long-awaited first "pain stock" store. Hakozaki was a place with little foot traffic at the time, but he decided to open the store with the desire to create a bakery that would attract many people from all over the country, even in such a place.
Since opening, they have created many popular items, including the "Mentaiko France", a Fukuoka specialty, and the "Levain Sandwich", a baguette made with whole wheat dough, stuffed with prosciutto, semi-dried tomatoes, and Camembert cheese.

In 2019, they opened their second store, "stock," in Tenjin. The Tenjin store's biggest feature is that it uses a special oven made in Germany that is said to bake the most delicious bread in the world.

There were many restrictions in terms of location and facilities in the store in order to install a full-scale kiln, so we were finally able to realize our wish with the second store. The calm yet stylish interior of "stock" has a wonderful atmosphere that is different from the main store.
Even after the decision to open was made, there were times when the baking process in the special oven was difficult and things did not go as planned, but the shop continued to develop products through repeated trial and error. They aim to make safe and delicious bread using domestic wheat and no additives, and their products, which make use of the artisan's sensibilities and have a wide variety of products, are appealing.

Hirayama has a strong desire as a baker to "pursue the creation of delicious bread that can be eaten every day." However, as a business owner, he also needs to think about staff and sales.

During the COVID-19 pandemic, she has responded flexibly and positively, never giving up. She wants to make bread that satisfies her, but she also needs to devote time to management. Despite this dilemma, she continues to work every day to balance bread making and management.

"I want to make the ultimate bread that is simple and that everyone will want to eat," Hirayama says with a smile, and his passion for "making bread" is clear.
"To be honest, I don't know what the future holds, including store expansion, but there are still many things I want to do and I'm also considering new initiatives."
"I want to continue making safe, delicious bread that I wouldn't feel guilty about feeding to my own children, by using domestic wheat and no additives," he said.

Hirayama-san is constantly trying and testing new things, aiming to create the "ultimate bread" that he can be satisfied with. While he is the manager of the store, he also continues to stand in the kitchen to face the bread. At "stock", all the staff continue to take on new challenges. We look forward to the bread of "stock", which is simple yet never stops evolving.
